Where do the olives come from?

The olives partly come from our olive groves and partly from selected producers, with whom we have been collaborating for years following a precise standard – healthy olives, clear varietal identity, early harvesting – and are processed directly in our mill with immediate processing and filtration, without intermediate steps and without compromising on quality.

What does this oil taste like?

There are two different lines, designed for different needs: the Premium line is where we focus the highest level of attention, with olives harvested early and processed in monocultivar to preserve their identity and aromas – you can choose it in three different flavors:

The Delicate, made from Ogliarola, Lecciana, Arbosana, has a soft and clean sensory profile, with hints of fresh olive, sweet almond, green apple, and slight herbaceous notes; on the palate, it is harmonious and smooth, with imperceptible bitterness and spiciness, easy to use every day, excellent raw on light dishes such as fish, white meats, vegetables, salads, and delicate preparations, without overpowering their flavors.

The Balanced, made from the Peranzana cultivar, has an elegant green fruitiness with hints of fresh olive, freshly cut grass, and almond; on the palate, it presents well-balanced and progressive bitterness and spiciness; it is versatile but with character, ideal raw on pasta dishes, legumes, structured vegetables, white meats, and more flavorful fish, where it adds personality without overpowering.

The Decisive, made from the Coratina cultivar, has an intense and recognizable profile with hints of green olive, artichoke, tomato leaf, and bitter herbs; in the mouth, it expresses clear and persistent bitterness and spiciness, typical of an oil rich in polyphenols, perfect raw on red meats, grilled dishes, rustic soups, substantial legumes, and dishes with a strong flavor, where the oil needs to make its presence felt.

The SuTutto line, on the other hand, has a balanced and simple taste, designed for daily use in the kitchen and at the table, without edges and without excesses, while maintaining freshness and stability thanks to immediate processing and filtration.

Is the oil produced by you?

Yes, the oil is produced by us in our oil mill: we directly supervise every stage, from the selection of the olives to the processing, without intermediate steps, with constant parameter control and immediate processing and filtering, to guarantee an extra virgin olive oil that is intact, fresh, and stable over time.

Do you sell other products?

Yes, in addition to extra virgin olive oil, we also offer other selected products, chosen with the same philosophy of quality and consistency: tomato purée, artisanal durum wheat pasta, typical cured meats and aged caciocavallo cheese, designed to complete your table and enhance the oil in your daily pairings.

How many types of oil do you have?

We have 4 types of oil, designed for different needs and uses: the Premium line, filtered, consisting of Delicato, Equilibrato, and Deciso, each with a distinct sensory profile – the SuTutto line, filtered, simpler and more balanced, suitable for everyday use – the Classica line, unfiltered, designed for cooking and for those seeking a more traditional oil to be used primarily in cooking – the Bio line, filtered, which includes Premium Delicato from organic Arbosana, processed with the same quality standards as the other lines, always with immediate processing and filtration.

Do you have an organic line?

In the Premium Delicato line, the Organic version of Arbosana is also available, made from olives grown organically and processed in our mill with the same standards as the Premium line, meaning immediate processing and filtration, to maintain a soft, clean profile consistent with the identity of Delicato.

Do you use chemicals to extract the oil?

Unlike other types of oil on the market, extra virgin olive oil is extracted only through mechanical processes, without the use of chemicals, which is why we can liken it to a "juice" made from olives.

Is it this year's?

We only sell oil from the current production year; we never have oil from previous years because we usually run out of stock by July, and you need to pre-order for the new oil.

What is its acidity?

Acidity never exceeds 0.3%, because we extract the oil only from intact olives harvested on the same day.

How many polyphenols does it have?

The polyphenol content varies depending on the line and cultivar – in the Premium line, values are typically between 250 and 600 mg/kg, thanks to early harvesting, temperature control, and immediate processing and filtration – the Deciso (Coratina) falls into the higher range, the Equilibrato (Peranzana) maintains significant but more balanced values, while the Delicato has lower levels consistent with its soft sensory profile – the SuTutto line has an average content, designed for daily use and versatility, without chasing numbers but rather balance and cleanliness.

When does it expire?

It should be noted that since oil is a preservative, it doesn't have a true expiration date. However, to maintain all its properties, it's best to consume it within 12 months of production. After that, it is still edible, but it loses nutritional and organoleptic properties.

Is it an acidic oil?

No, it's not an acidic oil: the free acidity does not exceed 0.3%, a much lower value than legal limits, obtained thanks to healthy olives and immediate processing in our mill with immediate working and filtering – it's important to clarify that bitter and pungent have nothing to do with acidity, but are positive characteristics linked to freshness and the presence of polyphenols – if you prefer an oil with imperceptible bitter and pungent notes, the ideal choice is Premium Delicato.

Is it genuine?

Yes, it is genuine in the truest sense of the word: it comes from healthy olives, processed immediately in our mill without intermediaries, with direct control of every stage of processing and immediate filtration, without blending, without corrections, and without shortcuts – what you find in the bottle is only extra virgin olive oil, whole, clean, and stable over time, not a manufactured product.

Is it a commercial oil?

No, it's not a commercial oil: a commercial oil is designed to be standardized, replicable, and produced in large volumes, often by blending oils of different origins to always achieve the same taste – ours, on the other hand, is an extra virgin olive oil produced and controlled by us, linked to the vintage, the cultivars, and the processing choices, with immediate processing and filtration, not pursuing standardization but real quality – which is why it can change slightly from one year to the next and is the exact opposite of an industrial oil designed only for price.

Is it a filtered oil?

Yes, it is a filtered oil: filtration is done immediately after extraction, with immediate processing and filtration, to eliminate water and micro-residues that would spoil aromas, taste, and stability over time – contrary to popular belief, a filtered oil better maintains freshness and aromas over time, avoiding defects that can appear even after a few weeks in unfiltered oils.
